Bean Hotpot and Winter Green Salad

On those days when you want something warm and hearty but also want to feel light and fresh after eating, this recipe is really simple and budget friendly.
The beans and sweet potato are a nourishing and satisfying combination to keep blood sugar levels balanced.
The flavours of the spices and garlic compliment the lightness of the cherry tomatoes and courgette.
Bitter greens with the lemon juice and olive oil are a welcome boost to your digestion as they support the liver.

Bean Hotpot Recipe
3 cloves of garlic - chopped
3 tbsp olive oil
1 large courgette (zucchini) - roughly chopped
10 cherry tomatoes - halved
1 purple sweet potato - roughly chopped
1 can borlotti beans (use the water in the can)
1 can cannellini beans (use the water in the can)
1 tsp italian herbs
1 tsp sweet paprika
1/2 tsp smoked paprika
1/4 tsp chilli flakes
salt & pepper
Method:
Add all ingredients to a heavy pot, mix well and cook on the stove top on a low heat for 1.5 hours. Stir occasionally.
Winter Bitter Green Salad Recipe:
chicory leaves - washed and chopped
strips of hard sheep/goats cheese (I used one coated in rosemary)
drizzled lemon juice & olive oil
